Etna Bianco "Imbris" D.O.C.

The vineyards for Etna Bianco Superiore Imbris are located in Caselle, a picturesque area in the municipality of Milo, on the eastern slopes of majestic Mount Etna. Here, at an altitude of 900 meters above sea level, the vineyard enjoys a unique position with an eastern exposure. This region is known for its sandy, volcanic soil that is exceptionally rich in minerals and has a slightly acidic reaction. The typical high-mountain climate creates significant temperature variations between day and night, which contributes to the complexity and freshness of the wines.

I Custodi uses traditional alberello (bush training) vines, with as many as 9,000 plants per acre. Harvesting takes place in early October, entirely by hand. The carefully selected grapes are brought to the winery in shallow crates where the whole bunches are gently pressed. Fermentation takes place in stainless steel tanks at a controlled temperature of 20°C, resulting in a wine that retains its fresh and mineral character.

After fermentation, the wine matures for about 18 months in stainless steel tanks. This is followed by a refinement of at least 24 months in bottle, which further enhances the wine's complexity and depth. Only 2,399 bottles of this special wine were produced, along with 50 magnums and 25 double magnums.

The Etna Bianco Imbris presents itself in the glass with a beautiful straw yellow color and greenish reflections. The bouquet is fine and harmonious, with delicate notes of spices and a hint of orange honey. On the palette, the wine is dry and mineral, with refreshing acidity that makes for a remarkably lively and long finish.
